- 1 kilogram Jerusalem artichoke
- 3 centimeters fresh ginger
- 375 milliliters White vinegar
- 2 Tbsps salt
- 2 Tbsps sugar
Preparation steps

Trim the Jerusalem artichokes, peel, rinse, pat dry and cut into 4-5 mm (approximately 18-1/4 inch) thick slices. Peel the ginger and cut into sticks. Bring the vinegar, salt, sugar and 375 ml (approximately 1 1/3 cups) of water to a boil. Add the Jerusalem artichokes and ginger and simmer for about 10 minutes until tender.

Remove the vegetables with a slotted spoon and put into prepared jars.

Bring the liquid to a boil and then cover the Jerusalem artichokes in the jars. Close securely and cool completely. Serve with thick slices of hearty bread.
