6 Tbsps olive oil
1 garlic clove
2 Tbsps lemon juice
1 tsp dried thyme
8 Lamb cutlets about 60-70 grams (approximately 2-2.5 ounces) each
1 Eggplant
salt
freshly ground peppers

8 long Wooden skewers

Preparation steps

1.

Mince the garlic and mix with the olive oil, lemon juice and thyme in a shallow dish. Cut the lamb cutlets into strips about 3 cm (approximately 1 inch) wide and place in the marinade. Cover and refrigerate for about 1 hour.

Rinse the eggplant, cut in half lengthwise and cut into 2 cm thick slices. Brush the wooden skewers with oil and alternately thread the lamb and eggplant onto them.

Preheat a grill or grill pan to high and brush with oil. Cook the skewers for about 1 minute on each side, then lower the heat to medium and continue cooking for about 3-4 minutes, until browned on all sides. Remove from heat, season with salt and pepper and serve.
