Preparation steps

Squeeze the lemon. Roughly dice the pumpkin. Add the pumpkin, vinegar, apple juice, lemon juice, cloves, star anise, sugar, and salt in a saucepan. Bring to a boil, reduce the heat, then simmer over low heat for 10 minutes until al dente.

Divide the mixture into jars, seal immediately, and let cool. Let marinate at least 2 days before using.
