Preparation steps

1.

Peel and rinse the potatoes, then cook for 30 minutes in boiling salted water. Drain the potatoes and coarsely mash with a potato masher. Mix the hot milk, 30 g (approximately 1 ounce) of cold butter, and the crème fraîche into the potatoes and stir until combined. 

2.

Slice the scallions thinly, then mix into the potatoes. Season to taste with salt and nutmeg. Garnish with the remaining butter and serve.
