Preparation steps

Peel the potatoes, rinse and cook for 25-30 minutes in boiling salted water. Cut the pancetta into cubes and fry crisp in a dry frying pan. Remove and drain on paper towels. Trim the scallions, rinse, shake dry and cut into thin rings. Drain the cooked potatoes, mash with the milk and the butter, stir in the pancetta and scallions and season with salt, pepper and nutmeg.

Rinse the cabbage leaves, shake dry, blanch briefly for 2-3 minutes in boiling salted water, remove and let cool. Cut out the thick ends of cabbage leaves, lay 2 leaves next to each other, overlapping half, set 2-3 tbsp of the puree in the center of the leaves, tie the leaves into a parcel and serve immediately.
