1 stale White roll
400 grams (approximately 14 ounces) Ground beef
100 grams (approximately 3 1/2 ounces) Quark
2 scallions
2 Tbsps finely chopped parsley
2 tsps Mustard
1 egg
1 egg yolk
1 Tbsp breadcrumbs
salt
Black pepper
2 Tbsps olive oil
2 Tbsps clarified butter

Preparation steps

1.

Peel the potatoes, rinse and cook in a pot of salted water until tender, about 20 minutes. Drain, let cool, and cut lengthwise into quarters or eighths.

Tear the roll into large pieces, soak in lukewarm water to soften and squeeze dry.

Combine the meat and cheese in a bowl. Rinse and thinly slice the green onion.

Mix the bread with spring onion, parsley, mustard, egg, egg yolk and breadcrumbs and add the meat mixture. Mix well and season with salt and pepper.

Preheat the oven broiler with the rack 6 inches from the heat.

Form small meatballs and place on aluminum foil on the broiler pan. Drizzle the meatballs with a little oil and broil until browned, about 8 minutes. Flip the meatballs over and broil until cooked through, about 5 minutes more.

7.

Meanwhile, heat the butter in nonstick skillet over medium heat. Add the potatoes and cook until lightly browned and piping hot. Season with salt and pepper. Serve meatballs with fried potatoes.
