180 grams breadcrumbs

Preparation steps

Peel shallot and chop finely. Heat butter in a pan and saute shallot until soft. Add ground meat, eggs, thyme, 80 grams (approximately 2 3/4 ounce) of breadcrumbs, season with salt and pepper and knead. With moistened hands, make 20 meatballs, flatten slightly, and add a prune in the middle. Wrap meat around prunes. Combine remaining breadcrumbs with paprika on a plate and roll meatballs in the mixture. Heat oil in a pan and cook meatballs, few at a time, for about 10 minutes or until golden brown on all sides. Drain on paper towels. Prepare al meatballs in the same manner and serve.
