1 ⅕ kilograms firm potatoes
vegetable oil (for basting and roasting)
1 kaiser roll (day-old)
3 Tbsps chopped parsley
100 grams Celery root
2 onions
500 grams Sauerkraut (canned)
750 grams mixed Ground meat
1 egg
salt
freshly ground peppers
½ tsp ground Caraway
3 tsps Mustard
2 Tbsps breadcrumbs

Preparation steps

Peel and rinse potatoes. Cut approximately 750 grams (1 pound, 10 ounces) into fries. Lay fries on a broiler pan. Season with salt, drizzle with oil and bake in preheated oven (200° C or approximately 400°F) for 20 minutes.

Meanwhile, soak roll in lukewarm water.

Peel and finely dice celery root and onions, then sauté in 1 tablespoon hot oil. Stir in parsley and set aside. Coarsely chop sauerkraut.

Squeeze roll to remove water. In a bowl, combine roll with ground meat and egg. Season with salt and pepper. Stir in caraway seeds, mustard, sauerkraut, and onion and celery root mixture. Mix well.

Shape mixture into a long loaf and brush with oil. Peel remaining potatoes and grate coarsely. Squeeze potatoes to remove liquid and mix with breadcrumbs. Season with salt and pepper. Remove pan with fries from the oven. Lay meatloaf in the center of the fries. Distribute grated potatoes loosely over meatloaf and place in oven at 200°C (approximately 400°F). Bake 45 minutes.
