- 2 Tbsps butter
- 2 ½ cups Tomatoes (peeled and quartered)
- 1 onion (finely diced)
- 2 cloves garlic cloves (finely diced)
- 1 tsp Dried rosemary
- 1 bay leaf
- 2 Tbsps fresh thyme (chopped)
- 1 ⅔ cups vegetable stock
- sugar
- 2 Tbsps Crème fraiche
- Basil (to garnish)
Preparation steps

Heat the butter in a pan and briefly fry the tomatoes, onions and garlic. Add the rosemary, bay and thyme and pour over the stock. Cover and simmer over a low heat for around 20 minutes.

Remove the bay leaf and purée the soup. Season to taste with sugar, salt and ground black pepper. Pour into bowls and serve garnished with crème fraîche and basil leaves.
