Cook the potatoes in a large saucepan of boiling, salted water until tender; roughly 20 minutes.

Drain and allow to cool a little before mashing with the cornflour, carrot, chopped parsley and seasoning. Fold in the crumbled feta gently.

Take small handfuls of the mixture and shape into burger-sized patties. Dust in the flour and shake off any excess.

Pre-heat the oven to 200°C | 400˚F

Heat tablespoons of the olive oil in an ovenproof frying pan and pan-fry the patties in batches, turning after 4-5 minutes when golden brown in colour underneath.

Cook for 4-5 minutes until golden brown on the other side, then transfer to the oven and cook for a further 6-8 minutes.
7.
Remove from the oven and stack on a serving plate. Garnish with a sprinkling of paprika and serve.
