80 grams Beef fillet

20 meters soy sauce
2 ripe Papaya
2 ripe muskmelons
1 tsp sugar
1 generous pinch Chili powder
800 milliliters Chicken broth
Tabasco sauce
2 tsps black Sesame seeds

Preparation steps

Cut the meat into 8 slices, season with salt, pepper and soy sauce and allow to marinate.

Halve papayas and melons, remove seeds, scoop out flesh and cut into small pieces. Set aside a few pieces of flesh for garnish.

Combine sugar with 2 tablespoons water in a saucepan and cook until caramelized and light brown in color. Add melon and papaya pieces, sprinkle with chili powder, pour in the broth and bring to a boil. Simmer 5 minutes, then puree. If necessary, pour in a little hot water. Season well with salt and a few drops of Tabasco sauce.

Pour the soup into warmed bowls, add marinated slices of beef and reserved melon and papaya pieces. Serve sprinkled with black sesame seeds.
