These beautiful, luscious meringues are low in calories as the meringue just utilizes egg whites, making them a perfect dessert for dieters.
Meringues are incredibely versatile. Once you've nailed the cooking technique, try this recipe with a berry mixture instead of the melon.

- 8 egg whites
- 2 Tbsps lemon juice
- 1 pinch salt
- 8 ½ ozs powdered sugar
- 3 ½ ozs fine sugar
- 2 packets Vanilla sugar
- 2 ozs Grape
- 5 ozs Watermelon
- 4 ozs honeydew melon
- 1 Kiwi
- 1 Banana
- 2 Tbsps lemon juice
- 2 Tbsps Orange liqueur
- 10 ozs Whipped cream
Preparation steps
Preheat the oven to 285°F.
Beat egg whites, lemon juice, and salt until stiff. Stir in powdered sugar and sugar and continue to beat until the mixture is glossy and forms stiff peaks. Pour mixture into a piping bag with a large circular tip. Pipe a circle, about 10 inches in diameter, onto a baking tray lined with parchment paper. Bake in the oven with the door ajar for about 1 hour. Remove and cool on a wire rack.
Rinse grapes, cut in half and remove seeds. Peel and thinly slice watermelon and melon. Peel kiwi, cut into quarters and thinly slice. Peel banana and thinly slice, sprinkle with lemon juice. Combine all fruit and season with orange liqueur.
Beat cream until stiff and spread onto meringue. Slice and serve topped with fruit salad.
