- 250 grams Pastry flour
- 1 tsp Baking powder
- 1 pinch salt
- 200 grams sugar
- 1 egg
- 70 grams butter
- 2 tsps lemon juice
- 100 milliliters Buttermilk
- 50 grams Coconut flakes
Preparation steps

With an electric hand mixer, whisk together butter, sugar, egg and lemon juice until frothy. Mix flour with baking powder and salt. Gradully add the flour mixture and buttermilk, alternating between the two. Mix well. Fold in the coconut flakes.

With a teaspoon, place "cloud-like" small blobs of the dough on a parchment paper-line baking sheet. Repeat this procedure until all the dough is gone, leaving space between each cookie. Bake at 180°C (approximately 350°F) for about 10-12 minutes.
