4 egg whites
1 pinch salt
1 Tbsp lemon juice
225 grams powdered sugar
250 grams ground almonds
100 grams dark Couverture

Preparation steps

1.

Mix egg whites with salt and  lemon juice until stiff. Gradually add powdered sugar and continue mixing until stiff and shiny. Fold in ground almonds.

Preheat oven to 150°C (approximately 300° F).

Fill pastry bag with egg white mixture and pipe a circle (about 4 cm or about 1.5" diameter), leaving a small hole in middle onto a baking sheet lined with parchment paper. Bake for about 15 minutes. Melt chocolate in a double boiler and place in a freezer bag. Cut off a tiny corner of bag for piping. Drizzle over finished cookies and allow chocolate to set. Arrange on a plate and serve.
