This is a great vegetarian meal, because while it doesn't contain any meat, it still has satiating protein from the beans in it. Additionally, it contains a great source of nutrients and carbs from the vegetables and tortillas.
You can also add meat if you would prefer more protein.

- 2 slices sliced white bread (cut into 1/2)
- 2 Tbsps vegetable oil
- 4 Tomatoes (finely diced)
- 1 red pepper (finely diced)
- 1 carrot (coarsely grated)
- 1 small onion (finely chopped)
- 1 clove garlic cloves (finely chopped)
- 1 cup canned Sweet corn (drained)
- ¾ cup canned Kidney beans (drained)
- 1 Lime (juice)
- 2 Avocados
- 4 wraps
- 4 Tbsps Sour cream
- ½ Iceberg lettuce (cut into strips)
- Chili powder
Preparation steps

Fry the diced bread in hot oil to make crispy croutons. Remove from the pan and leave to cool.

Mix together the tomatoes, pepper, carrot, onion, garlic, sweetcorn and kidney beans and season with salt, ground black pepper and lime juice. Cut the avocado into wedges and immediately drizzle with lime juice.
3.
Lay out the wraps and spread each one with 1 tbsp sour cream. Arrange the lettuce, vegetable mixture and avocado wedges on top. Scatter the croutons over, dust with a little chilli powder, and wrap.
