Minestrone

- 100 grams white dried Beans
- 150 grams Smoked bacon
- 1 onion
- 2 garlic cloves
- 1 stalk Leeks
- 2 carrots
- 2 stalks Celery
- ½ Fennel bulb
- 2 Sweet potato
- 1 Zucchini
- 100 grams green Beans
- 5 Savoy cabbage
- 100 grams Peas
- 3 Tbsps olive oil
- 1 ½ liters Beef broth
- salt

- 3 Tomatoes
- 100 grams Spaghetti
- parsley (1/2 bunch)
- Basil (1/2 bunch)
- 50 grams grated Parmesan
Preparation steps
Soak the beans overnight in cold water. Rinse and trim the vegetables and chop finely. Heat oil in a large saucepan. Peel the onion and garlic and finely chop. Cut the bacon into small pieces. Fry the bacon in oil, add the onions and garlic, add the drained beans and vegetables and sauté for 10 minutes. Pour in the broth, season with salt and pepper, cover and simmer over low heat for 1 hour.
Blanch the tomatoes in boiling water briefly, rinse with cold water, cut into quarters and add to the soup. Add the spaghetti ad cook for another 10-12 minutes. Rinse the parsley and basil and finely chop. Add half to the soup and season with salt and pepper. To serve, pour the soup into bowls, sprinkle with the remaining herbs and top with Parmesan cheese.
