- Ingredients
- 200 grams Corn (canned)
- 150 grams Frozen pea
- salt
- peppers
- 1 onion
- 2 stalks Celery
- 1 ½ liters Vegetable broth
- 200 grams carrots
- 250 grams Pumpkin
- 200 grams potatoes
- 200 grams Tomatoes
- 2 butter
- 200 grams soup noodles (such as cravattine)
Preparation steps
1.
Finely dice the onion. Rinse and slice the celery. Peel the potatoes, carrots and pumpkin. Slice the carrots, and cut the potatoes and pumpkin into 0.5 cm (approximately 1/4 inch) cubes. Remove the cores from the tomatoes. Briefly blanch the tomatoes, peel, remove seeds and dice.
2.
Drain the corn.
3.
Cook the onion in hot butter in a pot until translucent. Add the celery, carrots, potatoes and the pumpkin and sauté 5 minutes. Pour in the broth and bring to a boil. Simmer the soup, covered, over low heat for about 30 minutes. Then add the noodles, bring the soup to a boil, add the peas, corn and tomatoes and stir well. Reduce the heat and simmer, stirring occasionally, until the noodles are just cooked. Season with salt and pepper and serve.
