Separate 4 eggs. Mix together 4 egg yolks and remaining eggs and stir in chopped walnuts, bacon and breadcrumbs and season with salt and pepper. Beat egg whites with a pinch of salt until stiff and fold into egg yolk mixture. Grease ramekins with oil and fill with egg mixture.

Garnish each with a walnut half. Place ramekins on a baking sheet and bake in preheatedoven at 200°C (approximately 400°F) for 10-15 minutes until golden brown. Carefully lift finished omelettes from ramekins. Serve with salad, if desired.
