300 grams Filo dough
5 Tbsps olive oil
2 handfuls mixed Fresh herbs (such as thyme, rosemary, oregano, basil)
400 grams Soft cheese (such as Brie, Camembert)
salt
freshly ground peppers

Preparation steps

1.

Preheat oven to 200°C (approximately 400°F) and grease 24 wells of a mini-muffin baking sheet with oil.

Spread out filo dough on a work surface and cut out about 48 equal squares each about 7 cm (approximately 2 3/4 inches). Place once square into each muffin well, push down and brush with oil. Place another on top and brush again with oil. Rinse herbs, shake dry and set aside some thyme for garnish. Of the remainder, pluck off the leaves, chop and place into the tarts. Cut cheese into about 24 small cubes and put them on top of the herbs. Add thyme as garnish on top. Place in oven and bake until golden brown for about 15 minutes and serve warm or cool.
