Mini Scallop and Kohlrabi Burgers

- 4 mini hamburger buns
- 1 smaller Kohlrabi
- salt
- 1 handful Arugula
- 4 Scallop (with corail)
- Pastry flour (for dusting)
- 2 Tbsps butter
- 3 Tbsps olive oil
- freshly ground peppers
Preparation steps
Cut the mini hamburger buns in half horizontally. Peel the kohlrabi and cut 4 thin slices. Cut out round kohlrabi slices in diameter of the hamburger bun. In boiling salted water, blanch kohlrabi 3 minutes followed by quenching in cold water and draining.
Rinse the arugula and spin dry. Rinse the scallops and pat dry with paper towels. Dust with flour and shake off excess flour.
Heat 1 tablespoon butter in a pan and cook the hamburger buns cut side down until lightly browned. Remove from pan and set aside. Heat remaining butter (1 tablespoon) and olive oil in a pan. Cook kohlrabi slices and scallops on each side for 1-2 minutes. Season with salt and pepper.
Compose hamburger buns, kohlrabi slices, scallops and arugula into "hamburgers" and spear with wooden skewers.
