- For the salad
- 500 grams small, new potatoes
- 300 grams mixed Lettuce ((such as lamb's lettuce, Lollo Rosso and Biondo, radicchio)
- 1 Fennel bulb
- 1 tsp dried herbes de Provence
- 1 Tbsp Caper
- 5 Tbsps olive oil
- 2 Tbsps lemon juice
- 2 Tbsps white balsamic vinegar
- salt
- freshly ground peppers
- 1 pinch sugar
- For serving
- Lemon balm
- Basil
Preparation steps
1.
For the salad: Peel the potatoes and cook in boiling salt water for about 20 minutes. Let cool.

Rinse lettuce, trim and tear into small pieces.
3.
Rinse fennel, trim, quarter and cut into strips.
4.
Mix herbes de Provence with capers, olive oil, lemon juice and vinegar. Season with salt, pepper and sugar.
5.
To serve: Arrange lettuce with potatoes and fennel on four plates. Drizzle with the dressing and serve garnished with lemon balm and basil.
