Preparation steps

1.

Rinse, trim and cut the chard. Use the white, hard stems elsewhere. Cut the watermelon into bite-sized pieces. Rinse and drain the sprouts. Trim and rinse the scallions and cut diagonally into 2 cm wide rolls (approximately 1 inch).

2.

Rinse the duck, pat dry, and carve diamond shapes onto the skin. Rub with the 5-spice powder.

Fry in some oil for 2-3 minutes on both sides, then remove and pour away the oil. Allow the duck to cool slightly.

Meanwhile, sauté the chard in some oil. Season with salt and pepper and set aside.

3.

Cut the duck into 2 cm thick strips (approximately 1 inch) and fry again until crispy in a small amount of oil.

Rinse the cilantro and pat dry.

Arrange the chard decoratively on plates along with the sprouts, melon cubes, cilantro and duck strips.

Drizzle with the sesame oil and the lime juice and serve seasoned with salt and pepper.
