Preparation steps

1.

Separate the iceberg lettuce leaves, rinse, shake dry, remove the tough parts and cut the lettuce into bite-sized pieces. Rinse the melon, cut in half, scrape out the seeds and use a melon baller to scoop out balls.

Rinse the oregano flowers, shake dry and gently pluck the flowers. Toss everything together and arrange on plates. Rinse the chives, shake dry and cut into 6-8 cm (approximately 2 1/2-3-inch) long pieces.

2.

For the dressing: Peel and finely chop the onion. Rinse and finely chop the herbs and mix together with the onion and the remaining ingredients for the salad dressing, stir until smooth and season with salt and pepper.

3.

Cut the Gouda into small cubes, spread over the salad. Stir the dressing again, season, thin with a little water if necessary, sprinkle over the salad and serve.
