2 Tbsps vegetable oil
1 onion (finely chopped)
1 clove garlic cloves (crushed)
6 Sweet potato (diced)
1 red Bell pepper (seeds removed, diced)
1 yellow Bell pepper (seeds removed, diced)
1 red chili pepper (seeds removed, diced)
4 cups vegetable stock
½ tsp paprika
salt (to taste)
peppers (to taste)
grated Nutmeg (to taste)
To garnish
Coconut flakes
Coriander (coarsley crushed)

Preparation steps

1.
Heat the oil in a large pan and cook the onions until starting to soften.
2.
Add the garlic and cook for a further 2-3 minutes.
3.
Add the sweet potatoes, peppers and chilli pepper and cook for a further 10 minutes, stirring occasionally.
4.
Stir in the stock and paprika, cover and simmer very gently for about 20 minutes, until the sweet potato is tender. Cool slightly.
5.
Transfer 1/3-1/2 the soup to a blender or food processor and blend until smooth.
6.
Return to the pan and season to taste with salt, pepper and nutmeg. Reheat gently and serve garnished with flaked coconut and coriander seeds.
