- 1 onion (cut into half rings or thin wedges)
- 2 cloves garlic cloves (finely chopped)
- 2 Tbsps olive oil
- 1 Eggplant (halved lengthways and cut into 0.5 cm slices)
- 1 large Zucchini (diced)
- 2 Bell pepper (red and yellow, cut into strips)
- 2 cups button Mushrooms
- 4 Tbsps dry white wine
- ½ cup tomato passata (or sieved tomatoes)
- 1 Tbsp chopped oregano
- sugar
- 1 Tbsp balsamic vinegar
Preparation steps

Fry the onion and garlic in hot oil. Add the aubergine, courgette, peppers and mushrooms and fry for 2-3 minutes.

Add the wine, tomatoes and oregano and braise for around 10 minutes. Season to taste with salt, ground black pepper, a pinch of sugar and balsamic vinegar.
3.
Serve scattered with fresh oregano, if desired.
