- 1 ½ cups canned, mashed Sweet potato
- 1 cup light brown sugar (packed)
- 3 large eggs
- 0.333 cup Orange juice
- 0.333 cup vegetable oil
- 2 cups Whole wheat flour
- 1 cup all-purpose flour
- 2 ½ tsps Baking powder
- 1 ½ tsps cinnamon (ground)
- ¾ tsp salt
- ¼ tsp baking soda
- 2 cups Blueberries (frozen)
Preparation steps

Preheat oven to 350 degrees F.

In a extra large bowl combine sweet potatoes, brown sugar, eggs, orange juice and oil until smooth.

Stir together whole wheat flour, all-purpose flour, baking powder, cinnamon, salt and baking soda.

Add to sweet potato mixture and stir until combined.
5.
Stir frozen blueberries into batter. Divide into 24 paper-lined muffin cups (2 oz. size). Bake for 30-35 minutes, until lightly browned.
