- 5 Tbsps breadcrumbs
- For the muffins
- 1 cup flour
- sugar
- 2 eggs (separated)

Preparation steps
1.
To make the burgers, mix together the meat, egg, mustard and breadcrumbs. Season with salt and ground black pepper and divide into 4 equal portions. Shape into very thin patties.
2.
To make the muffins, mix together the flour with a pinch of sugar and salt. Stir in the egg yolks and the milk to make a smooth batter. Beat the egg whites with a pinch of salt and fold into the batter.
3.
Heat some oil in a pan and add 2-3 tbsp batter. Bake 8 golden brown muffin halves. Remove from the pan and keep warm in the oven (set to low).
4.
To make the scrambled eggs, beat the eggs and season with salt and ground black pepper. Pour into a hot pan with some melted butter and mix well.
5.
Heat 2 tbsp oil in another pan and fry the patties on both sides until golden brown.

Arrange the scrambled eggs onto 4 muffin halves and top with a cooked patty. Place a slice of cheese on top and grill for a few minutes. Place the other muffin halves on top and serve immediately.
