4 cooked Beets (peeled and sliced into rounds)
½ english Cucumber (rinsed and sliced)
2 cups Buffalo mozzarella (drained and sliced)
1 large onion (peeled and sliced thinly into rings)
3 Tbsps white wine vinegar
3 Tbsps good-quality olive oil
1 Tbsp finely chopped, fresh parsley (plus extra for garnish)
salt (to taste)
freshly ground Black pepper (to taste from the mill)
1 pinch granulated sugar
1 pinch Dry mustard

Preparation steps

In a small bowl, combine vinegar, oil, chopped parsley, salt, pepper, sugar and mustard; whisk well.
