- 4 cooked Beets (peeled and sliced into rounds)
- ½ english Cucumber (rinsed and sliced)
- 2 cups Buffalo mozzarella (drained and sliced)
- 1 large onion (peeled and sliced thinly into rings)
- 3 Tbsps white wine vinegar
- 3 Tbsps good-quality olive oil
- 1 Tbsp finely chopped, fresh parsley (plus extra for garnish)
- salt (to taste)
- freshly ground Black pepper (to taste from the mill)
- 1 pinch granulated sugar
- 1 pinch Dry mustard
Preparation steps

In a small bowl, combine vinegar, oil, chopped parsley, salt, pepper, sugar and mustard; whisk well.

On individual salad plates, stack sliced beets, cucumber, mozzarella and onion. Drizzle with dressing and garnish with fresh parsley. Serve.
