200 grams starchy potatoes
400 grams nettle
1 handful Chervil
1 onion
2 garlic cloves
1 Tbsp butter
1 Tbsp Pastry flour
100 milliliters dry white wine
600 milliliters Vegetable broth
200 milliliters Whipped cream
Nutmeg (freshly grated)

Preparation steps

Peel and dice potatoes. Rinse nettles and chervil, chop. Peel and chop onion and garlic. Heat butter in a saucepan and saute onion and garlic until translucent. Sprinkle with flour and saute briefly. Add wine, broth, cream (up to about 4 tablespoons) and potatoes. Simmer, stirring occasionally, for about 15 minutes. Add herbs and bring to a boil, puree finely. Add broth or simmer down to reach desired consistency. Season with salt and nutmeg. Pour into bowls and top with remaining cream decoratively. Serve.
