Preparation steps

1.
Rinse shrimp under cold running water, drain and blot dry with absorbent paper towels. Place the shrimp in a large mixing bowl.
2.
To make the Creole rub: In a small bowl, combine the cayenne pepper, thyme, oregano, paprika, rosemary, garlic powder and finely chopped parsley. Add 1 teaspoon salt and 1 teaspoon black pepper and stir to incorporate. Sprinkle the mix over the shrimp and toss well to coat. Drizzle olive oil over the shrimp and toss to coat. Cover, and marinate in the refrigerator for at least 40 minutes.
3.
Prepare the grill for direct grilling and preheat to high heat. Thread the shrimp onto the prepared skewers. Place the kebabs on the hot grill grate and barbecue for 2 to 3 minutes per side, turning with tongs, or until the shrimp are just cooked.
4.
Transfer skewered shrimp to a serving dish. Garnish with fresh parsley and lemon wedges. Serve.
