No Bake Yogurt and Fruit Bars

- 225 grams Whole Wheat Butter Cookies
- 75 grams softened butter
- Fat (for greasing)
- 1 can Peaches (465 grams) (approximately 16 ounces) (drained)
- 1 sm can Clementine (175 grams) (approximately 6 ounces) (drained)
- 1 sm jar lingonberry (175 grams) (approximately 6 ounces) (drained)
- 6 sheets silver gelatin
- 450 grams Yogurt (0.1% fat)
- 1 packet Vanilla sugar
- 90 grams sugar
- 1 Tbsp lemon juice
- 1 packet clear Pie glaze
- 125 milliliters multivitamin juice
Preparation steps
For the crust: Crush the cookies finely and then mix with the butter. Grease a 30 x 18 cm (approximately 12 x 7 inch) baking dish, fill with the cookie mixture and press into the base. Chill.
For the topping: Drain the fruit separately. Soak the gelatin in 50 ml (approximately 1/4 cup) peach juice. Combine the yogurt, vanilla sugar, 75 grams (approximately 1/3 cup) sugar and lemon juice. Gently warm the gelatin over low heat until melted. Stir in 2-3 tablespoons yogurt mixture and then mix into the main yogurt mixture. Pour over the base and chill for around 2 hours in the refrigerator. Arrange the fruit over top once the topping has set. For the glaze: Prepare the glaze according to the package instructions with the remaining sugar, juice and 125 ml (approximately 1/2 cup) water. Spread over the fruit then chill until set.
