- 5 Tbsps olive oil
- 8 slices stale white bread (diced)
- 5 cloves garlic cloves
- 1 ¾ cups almonds
- 1 bunch parsley (finely chopped)
- Cumin
- 1 Saffron
- 4 cups Meat stock
Preparation steps

Heat the oil in a pan and fry the bread until crisp and golden. Drain on kitchen paper.

Fry the garlic and almonds in the oil until golden. Stir in half the parsley and fry for 3 minutes. Purée the contents of the pan and season with salt, ground black pepper, cumin and saffron and mix with the stock.
3.
Slowly bring to the boil and simmer on a low heat for 20 minutes. Add half the croutons to the soup, season again with the remaining parsley and serve with the remaining croutons.
