- 1 White roll (or 3 slices of toast)
- 175 milliliters milk
- 1 kilogram Ground beef
- 1 onion
- 100 grams golden raisin
- 100 grams chopped blanched almonds
- 3 Tbsps Apricot jam
- 3 Tbsps Fruit chutney
- 25 milliliters lemon juice
- 2 Tbsps Curry powder
- 1 Tbsp Cardamom
- 2 Tbsps salt
- 2 Tbsps olive oil
- 2 eggs
- 4 bay leaves
Preparation steps
Preheat the oven to 200°C (approximately 375°F).
Crush the rolls slightly and soak in milk, then squeeze the bread (reserving the milk in a bowl) and add to the ground meat. Peel the onion and cut into very small pieces, and mix along with the raisins, almonds, jam and chutney. Season with lemon juice, curry, cardamom and salt and add 1 tablespoon oil. Separate 1 egg and mix the egg white with remaining whole egg into the meat mixture.
Grease a baking dish with the remaining oil and place the meat mixture into dish. Mix the reserved milk with the egg yolk and brush on top of the meatloaf. Top with bay leaves and bake in the preheated oven for about 1 hour. Cover with aluminum foil if top is browning too quickly. Allow to cool and cut into slices.
If desired, place on lettuce leaves in bowls and serve garnished with cucumber strips.
