Preparation steps

Preheat the oven to 190°C (approximately 375°F). Line a springform pan with parchment paper. For the cake: Separate the eggs. Whip the egg whites with 100 grams (approximately 1/2 cup) sugar until stiff and glossy. Whisk the egg yolks and remaining sugar until creamy, add the chopped butter and beat until creamy and emulsified. Fold in the ground almonds and cocoa powder and then fold in the egg whites.

Pour the batter into the prepared pan and bake for about 1 hour, until a toothpick inserted in the center comes out clean. Let cool slightly, remove from the springform pan and let cool completely.

For the glaze: Chop the chocolate and melt with the cream in a saucepan, stirring occasionally. Let cool slightly, pour over the cake to glaze and set aside until set. Serve garnished with calla lilies, if desired.
