- 4 fish fillets (e. g. coalfish, approx. 150 g each)
- 1 Tbsp lemon juice
- 2 Tbsps ground almonds
- 1 egg yolk
- ½ tsp Dried Sage
- lemon zest
- 0.333 cup slivered almonds (lightly crushed)
- 4 leaves Sage
- Lemon wedge (to serve)
Preparation steps

Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6 and line a baking tray with grease-proof paper.

Place the fish on the baking tray. Drizzle with a little lemon juice and season lightly with salt and ground black pepper.

Mix the ground almonds with the egg yolk, sage and a pinch of lemon zest, and season with salt, ground black pepper and the remaining lemon juice. Spread this mixture over the top of the fish fillets and scatter over the slivered almonds. Bake in the oven for around 20 minutes.
4.
Place one sage leaf on top of each piece of fish and serve with the lemon wedges.
