7 ozs whole spelt flour
½ cube fresh Yeast
1 tsp honey
¾ oz Oat bran
¼ tsp salt
1 oz long cooking Oats

Preparation steps

1.

Sift the spelt flour into a large bowl and make a well in the center. Crumble the yeast into it and let it rise for 5 minutes together with honey and 5 ounces lukewarm water.

Mix the pre-dough, oat bran and salt with the dough hook of a hand mixer until smooth. Cover with a damp tea towel and let rise at room temperature for about 1 hour.

Knead the dough well again, incorporating half of the oat flakes. Divide dough into 6 pieces, shape into rolls and sprinkle with remaining oat flakes. Place rolls on a baking sheet lined with parchment paper and cut crosswise with a sharp knife. Bake in preheated oven at 200 °C / 400 °F for about 25 minutes until golden brown.
