The rolls can be frozen well and baked on the toaster after defrosting. If you prefer, you can use other types of flour instead of spelt flour, for example wheat or emmer flour. The oat flakes can also be replaced by another type of flake (e.g. spelt flakes), seeds or kernels (such as sunflower seeds, linseeds or pumpkin seeds).

Ingredients
Preparation steps
Sift the spelt flour into a large bowl and make a well in the center. Crumble the yeast into it and let it rise for 5 minutes together with honey and 5 ounces lukewarm water.
Mix the pre-dough, oat bran and salt with the dough hook of a hand mixer until smooth. Cover with a damp tea towel and let rise at room temperature for about 1 hour.
Knead the dough well again, incorporating half of the oat flakes. Divide dough into 6 pieces, shape into rolls and sprinkle with remaining oat flakes. Place rolls on a baking sheet lined with parchment paper and cut crosswise with a sharp knife. Bake in preheated oven at 200 °C / 400 °F for about 25 minutes until golden brown.
