¼ cup sunflower oil
4 ½ cups Beef tripe (trimmed and sliced)
3 cups Cider
1 cup Beef stock
salt

Preparation steps

1.
Coat the trip in the oil and season generously.
2.
Heat a large casserole dish over a moderate heat until hot.
3.
Flash-fry the tripe in batches for a minute, transferring each completed batch to a slow cooker when finished.
4.
Add the stock, cider and seasoning and cover with a lid. Braise on a medium setting for 8 hours until the trip is tender.
5.
Adjust the seasoning to taste before ladling into soup bowls. Serve immediately.
