- ⅔ cup sticky Rice flour
- ⅔ cup Rice flour
- flour (for the work surface)
- 4 cups vegetable stock (vegan)
- 5 ½ cups baby Bok Choy
- 2 Tbsps light soy sauce
- 1 tsp brown sugar
- 2 Tbsps Rice vinegar
- 2 Tbsps Dried Goji berry
Preparation steps
1.
Mix both types of flour in a bowl with a pinch of salt. Work in enough water (approx. 140 ml) until a smooth, pliable mixture is create.

On a floured work surface, roll the mixture out into two strands approx. 1 cm thick and shape into balls.

Place the stock in a pot and bring to the boil. Blanche the bok choy for 2-3 minutes until al dente. Remove from the pot, drain and arrange on a serving platter.

Mix together the soy sauce, sugar, rice vinegar and 1-2 tbsp stock and season with salt and sugar. Drizzle over the vegetables and leave to steep.
5.
Place the rice balls and the goji berries in the stock and cook for 2-3 minutes. Drain well and then place on top of the bok choy and serve.
