2 Tbsps Lard

2 Tbsps vegetable oil
2 Tbsps freshly chopped parsley

Preparation steps

1.

Peel the onion and chop finely. Peel the potatoes and cut into slices.

Heat the butter in a skillet and saute the potatoes until lightly browned, about 5 minutes. Add the pancetta and onion and saute until the onion is tender and the pancetta is crisp, 4-5 minutes. Add the caraway and season with salt and pepper.

Heat the oil in a skillet, crack the eggs into the skillet and fry the eggs as you like them. Sprinkle with salt. Spread the potatoes on 4 small plates, top with an each with an egg and serve sprinkled with chopped parsley.
