8 cloves garlic cloves
3 Tbsps olive oil
3 Tbsps brown sugar
50 milliliters balsamic vinegar
100 milliliters dry Red wine
80 milliliters Vegetable broth

Preparation steps

Peel the garlic. Julienne the white parts of the scallion, and thinly slice the light green parts into rings. Thinly slice the garlic. Heat the oil in a pan and sweat the scallions with the garlic until soft.

Sprinkle with the sugar, and caramelize. Deglaze with the vinegar and wine, then add the broth. Simmer for 15 minutes over low heat. Divide into jars or a bowl, and let cool. This goes very well with toasted meats.
