- 600 grams mild onions
- 1 starchy potato
- 2 Tbsps butter
- ¼ l white wine
- 1 Herb bouquet (such as thyme, bay leaf, parsley)
- 1 l Beef stock (from a jar)
- 100 grams grated Emmentaler cheese
- 4 slices day-old white bread
- 2 garlic cloves
Preparation steps

Peel, halve and thinly slice onions. Peel, wash and chop potatoes. Heat butter in a saucepan and sauté onions in portions, add wine, reduce liquid and add potato. Pour in broth and add herbs (tied with kitchen twine). Bring to boil, reduce to low heat and simmer gently for 40 minutes. Peel garlic and rub bread with it. Distribute soup into oven safe bowls, place a slice of bread on top of each bowl and sprinkle a thick layer of cheese on top of bread.

Bake at 200°C (approximately 400°F) for approximately 10 minutes until golden brown. Serve immediately.
