5 Tbsps butter (melted and slightly cooled)
¾ cup Orange juice
2 Tbsps Orange zest (finely grated)
¾ cup Buttermilk
3 large eggs
2 cups unbleached all-purpose flour
½ tsp salt
½ tsp baking soda
1 ½ tsps Baking powder
¼ cup granulated sugar
vegetable oil (for pan)
2 Oranges (sliced)
pure Maple syrup (to serve)

Preparation steps

Preheat oven to 200º F (to keep pancakes warm).

In a large mixing bowl, combine the first 5 ingredients. In a separate bowl, sift the dry ingredients together; make a well in the center of the dry ingredients; slowly pour in the liquid mixture. Whisk gently until just combined. Do not overmix.

Heat a nonstick griddle or skillet over medium heat for 4 to 5 minutes. Brush the hot griddle or skillet lightly with vegetable oil. Pour 1/4 cup of batter for each pancake onto the hot griddle. When bubbles appear on the top of the pancakes and the edges are starting to look dry, flip the pancake and cook until golden brown the second side. Adjust heat as necessary. Repeat until all the batter is gone.

Transfer cooked pancakes to a platter or wire rack in a single layer. Place in oven to keep warm.
5.
Divide hot pancakes among plates; serve immediately. Garnish with orange slices and maple syrup. Serve.
