1 Tbsp Lime juice
1 tsp finely chopped, fresh ginger
1 tsp finely chopped chili peppers
½ tsp sesame oil
1 Tbsp Canola oil

Preparation steps

1.

Scrub the oysters, rinse and drain. Hold the oysters in 1 hand with a kitchen towel with the arched side down. Pierce with an oyster knife behind the hinge and open by rotating. Then cut the upper muscle attachment of the shell and remove the top shell. Cut the lower muscle of the shell, collect the oyster liquid and remove the meat from the shell.

Pour the oyster water through a fine sieve and set aside.

Scrub the oyster shells well to clean.

For the sauce, combine the ingredients with 2 tablespoons of the oyster water in a small saucepan and heat.

5.

Place the oysters back in the shells, drizzle with the sauce and serve.
