Preparation steps

1.

Peel onion and garlic and coarsely chop. Rinse bell pepper, cut in half, remove seeds and ribs and chop. Divide chicken into 12 pieces and remove skin. Cut beef into cubes. Cut sausage into thick slices. Rinse mussels and clams. Heat 5 tablespoons olive oil in a large, deep frying pan and fry onion until soft. Add bell pepper, chicken pieces and beef, fry all until while stirring until lightly browned and season with salt and pepper. Add garlic, tomatoes and 1/2 liter (approximately 16 ounces) of broth to the pan and simmer uncovered for 10 minutes. Then add another 1/2 liter (approximately 16 ounces) of broth and simmer for 10 minutes.

2.

Heat olive oil in a large paella pan and fry rice briefly while stirring. Dissolve saffron powder in a bowl with few spoonfuls of hot broth. Add remaining broth and saffron mixture to the rice and mix everything well. Add beef and vegetable mixture to the rice and stir. Add peas and sausage slices. Preheat the oven to 200°C (approximately 400°F) degrees and bake the paella for approximately 5 minutes. Add shrimp, shrimp tails, mussels and clams to the pan and cook in the preheated oven for another 10 minutes. Remove from the oven and mix well. Serve immediately.
