Paella Style Soup

- 1 shallot
- 2 garlic cloves
- 4 Tbsps olive oil
- 4 ozs Paella rice
- ⅒ gram Saffron (a generous pinch)
- 7 cups Chicken broth
- 6 ozs Peas (fresh or frozen)
- 7 ozs mussels
- 6 ozs shrimp (peeled and deveined)
- 2 boneless, skinless Chicken breasts (each 4-5 ounces)
- 2 Tbsps Sour cream
- salt
- freshly ground peppers
- 1 pinch Chili powder
Preparation steps
Peel the shallot and garlic, chop finely and sauté in 2 tablespoons oil. Add rice, mix and sauté until translucent. Then pour in about 4 cups broth and saffron and cook 20 minutes over low heat. Stir occasionally. In the last 5 minutes mix inn the peas.
Rinse mussels and shrimp thoroughly and drain. Rinse chicken, pat dry and cut into pieces. Lightly fry chicken in oil. Then add mussels and shrimp and pour in the remaining broth. Cover the pot and let cook for 3-4 minutes then remove and discard any shells that did not open.
Mix seafood with chicken including the liquid into rice soup and stir in sour cream. If necessary add a little broth or simmer briefly, until the desired consistency is reached. Season with salt, pepper and chili powder and serve.
