- ½ cup Oil (divided)
- 4 Tbsps fresh Lime juice
- 2 Tbsps honey
- 1 red chili pepper (seeds removed and chopped)
- 4 boneless, skinless Chicken breasts (halves)
- 2 orange Bell pepper
- 2 cloves garlic cloves (peeled and chopped; divided)
- fresh Lime zest (to garnish)
- 1 fresh Lime (cut into 4 wedges)
Preparation steps

Whisk together 6 tablespoons oil with the lime juice, honey and chopped chile.

Rinse the chicken under cold running water and pat dry with paper towels. Cut the chicken into bite size pieces, mix with the marinade and set aside.

Brush the bell peppers with a little oil and place under a hot broiler until the skins are charred all over, turning frequently. Put in a bowl, cover with plastic wrap and set aside.

Heat the remaining oil in a skillet and saute 1 clove garlic until fragrant, about 1 minute. Remove the chicken from the marinade and cook the chicken pieces for about 6 to 8 minutes, or until browned on all sides. Transfer to serving plates or a platter.

Meanwhile, remove and discard the pepper skins and seeds. Place the peppers in a food processor with the remaining garlic and blend well. Season with salt and pepper.

Mix the peppers and garlic with the reserved marinade, heat quickly in the skillet and drizzle over the chicken pieces. Scatter with lime zest and serve immediately with lime wedges.
