- For the pancakes
- 2 eggs
- 200 milliliters milk
- 120 grams Pastry flour
- 2 Tbsps sugar
- vegetable oil (for frying)
- For the filling and caramel
- 400 grams Melon (such as cantaloupe)
- 1 Grapefruit
- 150 grams Yogurt
- 4 Tbsps sugar
Preparation steps

Beat the eggs, the milk, the flour and the sugar together until smooth and thick. Let it sit for about 20 minutes.

Cube the melon. Peel the grapefruit, then rinse and cut the slices. Collect the juice from the grapefruit. Mix the juice with the yogurt and 2 tablespoons of sugar.

Heat up some butter in a pan. Pour the batter in and fry until golden brown, or for 1-2 minutes. Repeat for all pancakes. Upon finishing each pancake, place on a baking sheet in the oven (at 80°C, approximately 175°F) to keep warm until all pancakes are done.

Place the pancakes on a serving dish, topped with the fruit mixture and cut into quarters, if desired. Caramelize the remaining sugar in a pan and drizzle over pancakes. Serve with a dollop of yogurt as garnish.
