80 grams sugar
250 grams mixed Berry (such as strawberries, currants and raspberries)
1 Tbsp lemon juice
mint (for garnish)

Preparation steps

Soften the gelatin in cold water. Slit the vanilla pod lengthwise and bring to a boil with the cream and 60 g (approximately 2 ounces) of sugar. Squeeze out the gelatin. Remove the cream from the heat, and dissolve the geltin, stirring constantly. Cool for 10 minutes, then remove the vanilla pod. Rinse 4 glasses in cold water, then divide the vanilla mixture into them. Chill, covered, for at least 4 hours in the refrigerator.

Rinse, trim, and chop the berries. Set 4 tablespoons aside for garnish. Mix the rest with the remaining sugar and lemon juice, then puree. Pass the puree through a fine strainer, and use to top the panna cotta before serving. Garnish with the reserved berries and the mint.
