2 Tbsps olive oil
1 onion (finely chopped)
2 large carrots (peeled and sliced)
2 floury potatoes (peeled and diced)
2 tsps paprika
1 tsp ground Cumin
2 cups canned Tomatoes
1 cup tomato passata
1 cup low-sodium chicken stock
18 ozs Pork loin (sliced)
½ cup non-fat yogurt
3 Tbsps Dill (roughly chopped)
½ tsp smoked paprika (to garnish)
salt
freshly ground Black pepper

Preparation steps

1.
Heat the olive oil in a casserole dish set over a medium heat until hot. Add the onion, carrot, potato, and a pinch of salt, sweating for 5 minutes.

Stir in the spices and cook for a further 2 minutes. Add the chopped tomatoes, passata, and stock, stirring well.
3.
Bring the stew to a boil, and then add the pork and reduce to a gentle simmer. Cover and cook over a low for 40 - 45 minutes, stirring occasionally, until the pork is tender.
4.
Once the pork is ready, stir through a couple of tablespoons of yoghurt. Adjust the seasoning to taste with salt and pepper.
5.
Serve the pork with a garnish of yoghurt, dill, and smoked paprika on top.
