Spaghetti provides a lot of energy-rich carbohydrates; bacon, parmesan and egg yolk provide a good portion of protein. Calcium from the cheese also supports bone and dental health.
As the vegetable content of a classic carbonara is very lean, it is recommended to reduce the portion by a third and to serve a mixed leaf salad with a vinaigrette. This saves calories and replenishes the daily vegetable account.
For more fibre, spaghetti can be replaced by the wholemeal variant.

- 500 grams Spaghetti
- salt
- 4 egg yolks
- 150 milliliters Whipped cream
- freshly ground peppers
- 150 grams Smoked bacon
- 1 garlic clove
- 500 grams Spaghetti
- 1 Tbsp olive oil
- 50 grams freshly grated Parmesan
Preparation steps
Boil spaghetti in salted water until al dente.
Combine egg yolks with cream in a bowl. Season with salt and pepper and whisk together. Cut bacon into small cubes. Peel garlic and chop finely. Sauté bacon in a pan with hot oil until crispy. Add garlic, sauté briefly and add in drained noodles. Turn off the heat and mix in the egg cream mixture.
Arrange on plates and serve sprinkled with Parmesan.
